When I was surfing the web, looking for organizations or websites dedicated to nutrition, I came across a wonderful blog that I wanted to share with you all. The blog is written by another health focused woman named Rebecca Scritchfield and is called "Rebecca Thinks…".
Rebecca is a both a registered dietitian as well as a certified health and fitness specialist. Rebecca has her own Washington D.C. private practice where she specializes in sports nutrition and weight management for professional athletes. In addition to her private practice, Rebecca also provides nutrition communications consulting, teaches sports nutrition at George Washington University, and tours the country giving talks on finding the wellness within with former Biggest Loser winner Bernie Salazar.
On her blog, "Rebecca Thinks…", Rebecca offers her knowledge and opinions on topics relating to nutrition and exercise. She has posts relating to news as well as information on different types of foods and workouts. I highly suggest stopping by her sight for some great advice and to help further your learning about health even more.
In addition to "Rebecca Thinks…", Rebecca Scritchfield started the ME MOVEMENT about a year ago. The site is used as a place for people, including Rebecca, to blog about self-care and the successes and struggles they go through in order to put themselves first and to become a better spouse, parent, employee, etc. On this site, you can find even more good advice and tips about health, exercise, and nutrition.
In her most recent post, Rebecca gave advice on what she believes to be the ten most important healthy staples to have in your kitchen and on a budget. She includes items such as beans, oatmeal, sweet potatoes, eggs, and more. She goes into details about her reasons for choosing each one too. I would also recommend adding this site to your favorites because it is a wonderful resource for those of you who want to learn more about nutrition and who want to better your health.

Today's Workout: So… I lied. I actually did not get a workout today in either :(. Figured one last day off wouldn't do me any harm, in fact it may be good for me. So tomorrow I will start my working out. If you want to do a workout today, I suggest doing one on a stationary bike. Try putting your level up higher than normal (maybe like 12) and then see how far you can go in thirty minutes. Make sure to also complete a cool down too!
Today's Food Tip: Today I had a super long work day (11 hours!) and so I got my dinner for tonight all prepared last night, then put it all in a crock pot, and plugged it in/turned it on this morning. It was absolutely delicious! AND best of all, it required very little work of me today! So, I thought I'd share the recipe with you.
Butternut Squash Soup with Thai Gremolata
Ingredients:
2 butternut squashes, peeled, seeded, and cut into 1 inch cubes
2 cups chicken both
1 unsweetened coconut milk 14 oz can
1/4 cup finely chopped onion
1 Tbsp packed brown sugar
1 Tbsp soy sauce
1/2 to 1 Tsp crushed red pepper
2 Tbsp lime juice
Thai Gremolata Ingredients:
1/2 cup chopped fresh cilantro or basil
1/2 cup chopped peanuts
1 Tbsp finely shredded lime peel (zest)
Directions:
- In a slow cooker, stir together squash, broth, coconut milk, onion, brown sugar, soy sauce, and crushed red pepper.
- Cover; cook on low for 4 to 5 hours or high for 2 to 2.5 hours.
- Using a blender, carefully transfer mixture into blender and blend until smooth. Then transfer back into the pot. Stir in lime juice. Ladle into bowls and top with Thai Gremolata (Stir together ingredients for recipe of Thai Gremolata). If desired, serve with lime wedges.
Today's Relaxation Activity: When I got home from work today, after eating my delicious bowl of squash soup, I sat down to enjoy an excellent movie. Tonight I recommend watching this very touching film about the strength of the limitless heart: John Q.
