Fish Friday: Italian Haddock with Tomatoes

Ingredients:
1-1.5 lbs fresh haddock
1/2 tsp salt
1/2 tsp ground black pepper
1/3 cup jarred pesto
2 (8 oz) packages cherry tomatoes or grape tomatoes, halved
1/2 cup chopped red onion
1 tbsp olive oil
1/4 cup shredded Parmesan cheese

Directions:
  1. Preheat grill pan or grill to medium. Season haddock with salt and pepper; rub evenly with pesto. Set aside.
  2. Place tomatoes and onions in a salad bowl. Drizzle with oil and sprinkle with cheese; toss to coat. Set aside.
  3. Place fish in pan or on grill. Cook 4 to 6 minutes per side or until fish flakes easily with a fork. Serve with reserved tomatoes.
