Sandwich Saturday: Cajun Steak Sandwich with Sweet Potato Fries

Ingredients:
4 sweet potatoes
1/8 cup olive oil
1 tsp ground black pepper
1 tsp salt
2 (8oz) trimmed rib-eye steaks or boneless beef top steak, cut 1/2 in thick
3 tsp Cajun or blackening seasoning
1/4 cup mayonnaise
1 tbsp ketchup
1 tsp molasses
2 ciabatta rolls, split and toasted
1 tomato, sliced
Sliced green onion (optional)

Directions:
  1. Heat oven to 400 degrees. Peel and cut sweet potatoes into fry sizes. Coat with olive oil, black pepper, and salt. Place potato fries onto a sheet pan, evenly. Bake for 20 minutes.
  2. Meanwhile, cut steaks in half crosswise. Coat broth sides of steaks with 1.5 tsp seasoning. Heat a cast-iron or heavy skillet over medium-high heat. Cook steaks in hot skillet for 3 to 5 minutes on each side.
  3. In a small bowl combine the mayonnaise, ketchup, molasses, and remaining seasoning.
  4. Place on steak on each roll half. Top with some of the sauce, tomato slice, and green onion. Serve remaining sauce with fries. Servings: 4.
