Taco Thursday: Taco Soup

Ingredients:
1.5 lbs ground beef
2 onions, chopped
1/2 green bell pepper, chopped
4 cups water
2 (8oz) cans tomato sauce
1 can diced tomatoes
1 can rotel
1 can corn, drained
2 tbsp ranch dressing
1 can pinto beans, drained
1 can pinto beans with jalapenos, drained
6 tbsp sour cream
6 tbsp cheddar cheese
1 bag family sized tortilla chips

Directions:
  1. Sauté ground beef, onions, and green bell pepper over medium-high heat until cooked through.
  2. Combine meat mixture with water and next 7 ingredients (through pinto beans with jalapenos) in a large sauce pan. Bring to a boil; then reduce to a simmer. Cook for 1 hour.
  3. Serve in a bowl with 1 tbsp sour cream, 1 tbsp cheddar cheese, 1/4 cup crushed tortilla chips. Yield: 6 servings (serving size: 2 cups)
